Sweet Crunchy Freezer Pickles
Crunchy sweet pickle slices that I freeze in tall wide mouth jelly jars. One of Boone's favorites!
Serves: about 3 pints
  • 7 cups thinly sliced cucumbers (with peel)
  • 1 medium onion, thinly sliced
  • 1 Tbs. pickling salt
  • ½ tsp. celery seed
  • 1 cup white vinegar
  • 1 cup granulated sugar
  1. Combine all the ingredients in a large baggie then sit in a bowl. Stir well, close baggie and refrigerate for 3 days. Stir every day.
  2. On the 3rd day, using a slotted spoon pack the vegetable into freezer containers and cover with brine. Leave ½ headspace if using jars. For bags, push all the air out and for freezer containers leave about ½ inch headspace. Freeze. Thaw before serving.
